Thai coffees have a special place in Climpson's folklore and this lot from Sirinya has easily been the most requested coffee we have offered in recent times. Working closely with our import friends at Indochina Coffee we are thrilled to see the return of this unique lot from the Chiang Rai highlands.

The Story

Sirinya Coffee is a family run business with a deep understanding of specialty coffee with their own roastery and coffee shop near the farm in Chiang Rai province. Working with their own coffee from seed to cup gives them a unique insight to experimentation and this lot is subject to a particularly unique Mossto Natural process. Here the whole ripe cherries undergo a fermentation in coffee cherry juice, adding an intense layer of fruity complexity. From here the coffee is first dried under sun before moving into indoor temperature controlled beds to slowly stabilise to 10-12% moisture.
The resulting coffee is truly unique with intense tropical fruit and sweet marshmallow tasting notes.

Historically, coffee has only grown commercially in Thailand since the 1960s and was championed as an alternative to opium. As coffee has largely replaced poppy cultivation there has been a profound impact on Northern Thailand with safer and more sustainable livelihoods for farmers and improved environmental outcomes. With import controls on foreign coffees, the majority of Thailand’s coffee is consumed domestically with specialty coffee rapidly growing in popularity. This has made its availability to European markets particularly rare with producers now benefiting from premium prices as buyers compete for limited lots. The upside of this is highlighting the long term viability of quality coffee and encouraging more farmers to learn from the team at Sirinya to improve their own production to specialty grade.

  • What date will my coffee be roasted?

    We aim to ship our coffee as fresh as possible, however you may receive coffee roasted up to 7 days prior to the shipping date.

  • What grind type should I choose?

    We offer multiple grind options from Cafetiere to Espresso and everything between. Our domestic espresso grind is slightly coarser and is perfect for home espresso machines, such as DeLonghi or Sage whereas the commercial espresso grind is better suited to commercial machines like La Marzocco or Sanremo.   • Can I order 1kg of coffee?

    This is not something we currently offer but why not consider helping us reduce packaging by ordering a 2kg bag instead? Wholebean coffee has a longer shelf life than you might think, up to 3 months!
